Salsa Verde

Need an all-purpose sauce that works with almost any meal? Try this Italian style Salsa Verde, a green sauce made from herbs, capers, garlic, and olive oil.

Herb based condiments add a ton of flavor and color to your food. Since the foundation of my dinners are simply prepared quality proteins, I like having something extra to brighten it up (read more about my go-to formula for weeknight meals). This salsa verde is one of our favorites since it works well on almost any food, from poached salmon and rotisserie chicken to grilled hamburgers and avocado slices.

Variations:

Mint Salsa Verde | Saveur – flavored with anchovies, mint, and tarragon
Fermented Salsa Verde | Nourished Kitchen – made with tomatillos, fermented with a vegetable starter culture or fresh whey
Mexican Salsa Verde | Sunset Magazine – tomatillos, poblano and serrano chiles are toasted for a smoky flavor
Chermoula Sauce | Real Food Digest  – a Moroccan flavored herb sauce, traditionally served with fish
