Need an all-purpose sauce that works with almost any meal? Try this Italian style Salsa Verde, a green sauce made from herbs, capers, garlic, and olive oil.
Herb based condiments add a ton of flavor and color to your food. Since the foundation of my dinners are simply prepared quality proteins, I like having something extra to brighten it up (read more about my go-to formula for weeknight meals). This salsa verde is one of our favorites since it works well on almost any food, from poached salmon and rotisserie chicken to grilled hamburgers and avocado slices.
This all-purpose herb sauce tastes great with vegetables, fish, chicken, and meat. Other herbs to try include mint, tarragon, and oregano. Anchovies are also common in many Italian inspired recipes.
1 bunch parsley
1 bunch cilantro
3/4 cup chopped scallions (about one small bunch)
3 tablespoon capers, rinsed
Juice and zest of one organic lemon
1 cup extra-virgin olive oil
3 cloves garlic, minced
1/2 teaspoon unrefined sea salt (or to taste)
1/2 teaspoon crushed red chile flakes – optional
Yield: 2 cups
Chop up the parsley and cilantro leaves. Mix with remaining ingredients in a medium bowl. Sauce can be refrigerated for up to one week.
